So, my oldest son had a special request this Christmas. All he wanted to eat were gingerbread cookies. Now, I have never made gingerbread cookies before. I have made every other cookie, but never gingerbread. At first, I was really tempted to just buy the mix. But, I knew my little guy wanted more than that. After all, he has been obsessed with The Gingerbread Man since last year. So, I googled and looked for a good recipe. I finally decided to use a recipe from food.com. It was a really simple recipe and the cookie dough was so easy to work with.
When they started to bake in the oven, my house was filled with that amazing holiday scent. Oooohhh, it just smelled so good!
When I took them out, I did my little happy dance. I could not wait for my little guy to sink his teeth into a gingerbread man. His perfect little smile is what makes my life worth while. And, I know he will be an honest critic. If he doesn't like it, I will know.
I just had to add a little decoration before it was time to eat them. I think the funniest thing was when he saw the gingerbread woman. He looked a little confused. He thought there were only gingerbread men. However, after he accepted there are gingerbread men and women, he took a big old bite out of the cookie. He gave me that amazing smile of his and I knew I did good. It is those moments when I love baking the most. In the end, it is my family that gives me the most joy.
